A Caviar Tasting Flight Guide for Hosting at Home
You don't need a restaurant reservation to taste caviar properly — you need a plan. Here's how to build a tasting flight at home.
1. Pick three, not five
Three tins is enough to taste real differences without overwhelming your palate. A good starting lineup: Siberian Sturgeon for mild, Oscietra for depth, and something bigger for contrast.
2. Taste light to bold
Start with the mildest variety and work up to the richest. Tasting a delicate caviar after a bold one will flatten it — order matters as much as selection.
3. One spoon per tin
Never dip the same spoon into two different tins. Set out a clean mother-of-pearl spoon per variety so flavors don't bleed together.
4. Taste it plain first
Before blini, before crème fraîche — taste each caviar on its own, straight off the spoon or on a plain cracker. That's the only way to actually notice the differences between grains, salinity, and texture.
5. Let guests vote
Pour a round of chilled champagne, lay out the three tins side by side, and let everyone pick a favorite. It turns a tasting into the centerpiece of the night, not a side dish.
